Looking for a super quick and healthy lunch? Make these lemony black eyed peas with zucchini. Super easy to make and full of flavour. Drizzle with a good amount of olive oil and fresh squeezed lemon juice!

Ingredients
- 540ml black eyed peas (1 can)
- 2 zucchinis, cut into thick slices
- 1 1/4 cup water
- olive oil
- juice of half a lemon
- flaky sea salt and black pepper
Method
- Boil the zucchini in 1 cup of water until soft.
- In the meantime, drain and rinse the black eyed peas under cold water. Once the zucchini is soft, drain the water. Using the same pan, add the black eyed peas, then add 1/4 cup of water. Gently stir and leave on a low heat to warm slightly.
- When ready to serve, use a slotted spoon to transfer each portion to a bowl. Then drizzle with a generous amount of olive oil and the lemon juice. Season with sea salt and pepper.
