If you love a good sandwich, then let us introduce you to this incredible butternut squash & whipped goat cheese sandwich. We made it on our homemade focaccia with caramelized onions and bacon, sliced pears, honey, micro greens, and of course a generous layer of whipped goat cheese and sliced butternut squash.
Makes 1 sandwich
Ingredients
- 1/4 butternut squash, sliced thinly
- 150g goat cheese
- 1 tablespoon olive oil
- 1/4 onion, sliced
- 4 slices of bacon
- 1 pear, thinly sliced
- handful of romaine lettuce, sliced
- handful of micro leaves
- drizzle of honey
Method
- Start by making the whipped goat cheese. In a food processor add the goat cheese and start to drizzle in the olive oil, until smooth. Remove from the food processor and set aside.
- Caramelize the onions in a medium saucepan, then cook the bacon until crispy. Roughly tear apart the bacon into small pieces and combine with the caramelized onions. Save the leftover bacon fat and use it to cook the butternut squash. Cook the butternut squash until soft.
- In a small bowl, combine the micro greens and lettuce and drizzle with the caesar dressing.
- Cut the focaccia down the middle and begin building the sandwich. Spread the whipped goat cheese on both halves of the focaccia. Then on the bottom half, layer the butternut squash, the caramelized onions and bacon, lettuce and micro greens, and sliced pears. Drizzle with a little bit of honey, then add the top half of the focaccia.
