A simple and quick pasta. Packed with lots of flavour – zucchini, sun-dried tomatoes, and sliced bocconcini. It’s the kind of pasta you can quickly whip up for mid-week dinners or for a dinner party.

Ingredients
- 1/2 onion, finely chopped
- 1 zucchini, finely chopped
- 2 tablespoons olive oil
- 1/2 cup cherry tomatoes, sliced
- 6 sun-dried tomatoes, finely chopped
- 2 tablespoons tomato paste
- 200g spaghetti
- pinch of salt and pepper
- bocconcini, sliced (use as much or as little as you like)
Method
- Heat the olive oil in a saucepan over medium heat; add the onions and zucchini and sautée until slightly soft.
- Stir in the cherry tomatoes, sun-dried tomatoes and tomato paste. Reduce the heat to low and let simmer while you cook the pasta.
- In a pot of salted water, boil the pasta until al dente. Once done, drain the pasta, but keep some of the pasta water. Transfer the pasta to the sauce and toss together. Add a splash of pasta water to loosen, if needed. Season with salt and pepper. Finish by stirring in the sliced bocconcini.
- Serve in bowls and enjoy!
