A delicious combination of sweet and sour. With a super moist and light sponge, this is a delicious summer cake everyone will love.

Makes one 8″ cake

Ingredients

FOR THE PLUMS

  • 7 – 8 plums, halved and pit removed
  • 1 tbsp sugar
  • 1 tsp cardamom seeds

FOR THE CAKE

  • 120g plain yogurt
  • 150g sugar
  • 3 eggs
  • 190g all-purpose flour
  • 10g baking powder
  • zest of 1/2 a lemon
  • 119g neutral oil

Method

  1. Prep the plums: in a bowl combine the plums with the sugar and cardamom seeds. Set aside.
  2. In a large mixing bowl, whisk the eggs. Then add the yogurt and sugar until well combined. Mix in the lemon zest, flour, and baking powder. Once fully combined add in the neutral oil and keep mixing until you have a smooth batter.
  3. Lightly butter an 8” cake pan and line the bottom with parchment paper. Add the halved plums along the bottom of the pan, skin-side facing up. Then pour the batter on top.
  4. Bake in the oven at 350°F for 40 minutes.
