Need a summer side dish? Try these tomatoes on creamy hummus. With an olive coriander dressing that takes the entire dish to the next level, everyone is bound to love it!
Serves: 4 – 6
Ingredients
FOR THE HUMMUS
- 1 can chickpeas
- 1/2 clove garlic
- juice of 1 lemon
- heaping teaspoon of tahini
- 150ml chickpea water
- 1 tbsp olive oil
- salt and pepper, to taste
FOR THE DRESSING
- handful of chopped coriander
- 1 cup of black olives, pit removed and chopped
- good glug of olive oil
TOMATOES
- a mixture of cherry and regular tomatoes, sliced
Method
- Into a food processor, combine all the ingredients for the hummus. Blitz until smooth and creamy.
- In a bowl, combine all the ingredients for the dressing.
- Spread the hummus on a serving plate, then spoon over the tomatoes. Top with the dressing.
