Need a summer side dish? Try these tomatoes on creamy hummus. With an olive coriander dressing that takes the entire dish to the next level, everyone is bound to love it!

Serves: 4 – 6

Ingredients

FOR THE HUMMUS

  • 1 can chickpeas
  • 1/2 clove garlic
  • juice of 1 lemon
  • heaping teaspoon of tahini
  • 150ml chickpea water
  • 1 tbsp olive oil
  • salt and pepper, to taste

FOR THE DRESSING

  • handful of chopped coriander
  • 1 cup of black olives, pit removed and chopped
  • good glug of olive oil

TOMATOES

  • a mixture of cherry and regular tomatoes, sliced

Method

  1. Into a food processor, combine all the ingredients for the hummus. Blitz until smooth and creamy.
  2. In a bowl, combine all the ingredients for the dressing.
  3. Spread the hummus on a serving plate, then spoon over the tomatoes. Top with the dressing.
