There’s nothing like a classic sausage roll. Made with an apple sausage filling and wrapped in a flaky rough puff pastry. Serve with honey Dijon mustard on the side for a delicious meal.
Ingredients
- 500g pork sausage (about 5 sausages)
- 1 tsp butter
- 1 tbsp olive oil
- 1/4 red onion, finely chopped
- 1/2 green apple, peeled and finely chopped
- 2 sprigs thyme, stem removed and finely chopped
- 3 sage leaves, finely chopped
- 1/4 tsp cayenne pepper
- 1/4 tsp paprika
- good pinch of salt and pepper
- 1/4 cup breadcrumbs
- sprinkle of sesame seeds, fennel seeds, and flaky sea salt (optional)
- 1 egg, whisked
- Puff pastry (either make a rough puff or store-bought)
Method
- Prepare the filling: Melt the butter and heat the olive oil together in a saucepan over medium-high heat. Cook the onions until soft and then add in the diced apples. Leave on the heat until the mixture has softened.
- In a large bowl, decase the sausage from their filling. Stir in the onion and apple mixture. Then add the thyme, sage, cayenne pepper, paprika, a good pinch of salt and pepper, and finally, the breadcrumbs. Use your hands to mix everything together until well-combined.
- Prepare the pastry: Roll out the puff pastry with the longest side in front of you. Form the sausage filling into a log on the side of the puff pastry that’s closest to you, but not at the very edge. Brush the egg wash along the edges of the pastry.
- Carefully fold over the puff pastry so that it encases the sausage filling. Press down along the edges. You can trim parts of the edges to make it more even. Brush the roll with the remaining egg wash. Sprinkle the fennel and sesame seeds on top, along with the flaky sea salt. Slice the roll into 2″ pieces.
- Transfer the rolls onto a baking tray lined with parchment paper. Cook in the oven at 350°F for 40 minutes or until golden brown and cooked through.
- Serve with honey Dijon mustard on the side.
