A delicious take on the traditional Spanish dish ‘Pan Con Tomate’ – grated tomato, garlic and parsley are spooned over grilled sourdough. Then topped with sardines and olive oil for an easy and fresh meal.

Ingredients

  • 1 slice of sourdough bread
  • 1 tomato
  • pinch of salt and pepper
  • 1 clove of garlic, finely diced
  • olive oil
  • handful of parsley, finely chopped
  • 1/2 chili pepper, finely diced
  • 1 – 2 sardines

Method

  1. Start by grating the tomatoes with the skin on over a large or shallow dish. Once done, run through a sieve to drain the excess juice.
  2. In a small bowl, combine the grated tomatoes, diced garlic and chopped parsley. Season with salt and pepper.
  3. Grill or toast the bread, then spoon the tomato mixture on top. Add the sardines, then sprinkle with the chilli peppers. Finish off with a drizzle of olive oil.
