This is a classic French dish made with jammy onions, anchovies, and olives. While it’s normally made on flatbread, we opted to make it on puff pastry for a little bit of a twist.

Ingredients

  • 2 onions, very finely sliced
  • 1 heaping tsp of tomato paste
  • pinch of salt and pepper
  • a knob of butter
  • 1 tbsp of olive oil
  • a splash of water
  • 1 – 2 sheets of puff pastry, thawed
  • 75g anchovies
  • 4 – 5 olives, sliced in half and pit removed

Method

  1. Make the onions: In a large saucepan, melt the butter with the olive oil and add the sliced onions. Mix, then cover with a lid and cook over low heat for 20 minutes, stirring occasionally. Stir in the tomato paste and splash of water, cover and cook for another 20 minutes. Once the onions are softened and jammy, season with salt and pepper, then remove from the heat.
  2. Preheat the oven to 350°F.
  3. Roll out the puff pastry to fit a small baking tray. If you need more than one sheet, roll both sheets together. Use a fork to prick the bottom of the puff pastry. Then use a knife to create a border around the pastry.
  4. Spread the puff pastry with the onions. Lay the anchovies in a star shape, then add the sliced olives in each section.
  5. Bake for 30 minutes or until the border is lightly browned.
  6. Cut into squares and enjoy hot or cold.
