Every once in a while, you just want a really good burger – this recipe is just that. A super flavourful burger with a hint of smokiness thanks to the paprika, slathered with a special mayo ketchup sauce that makes the burger what it is.

Ingredients

FOR THE MEAT

  • 400g good quality beef mince
  • 1/4 cup finely chopped onion
  • few dashes of Tabasco
  • 1 egg
  • 1/4 cup polenta
  • 1 tbsp BBQ sauce
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika (or regular)

FOR THE SAUCE

  • 2 tbsp mayo
  • 2 tbsp ketchup
  • 1/4 tsp paprika
  • 3-4 Cornichons, finely diced

TO SERVE

  • sliced cheddar cheese
  • roasted red peppers
  • lettuce leaves
  • sliced tomato
  • brioche buns

Method

  1. In a large bowl, mix together all the ingredients for the meat until fully combined. Divide the mixture into four equal parts. Roll each section into flattened patties, then store in the fridge for at least an hour.
  2. In a small bowl, combine all the ingredients for the sauce. Mix until combined.
  3. Heat oil in a saucepan over medium-high heat. Place the burgers in the pan and let cook until golden on one side. Flip over and leave until fully cooked through. Place the 1-2 slices of cheese on top of each patty and let melt.
  4. Build the burger: Lightly grill the buns then spread the sauce on both pieces. On the bottom bun, place a slice of lettuce, then the patty with cheese. Add the roasted peppers and sliced tomatoes. Add the top bun and enjoy!
