If you have ever wondered how to make a basic pasta right at home, then we’re going to lay it all out for you. We’re showing you how to make a simple tagliatelle pasta, but the base recipe works for all kinds of pasta shapes.

Serves: 4

Ingredients

  • 300g “00” flour
  • 3 whole eggs
  • 1 egg yolk
  • Pinch of salt

Method

  1. In a bowl, combine the flour and salt.
  2. Transfer the combined flour and salt onto your work surface. Using your hands, create a well in the centre, then add the eggs and egg yolk directly in the middle of the well.
  3. Using a fork, whisk the eggs and slowly incorporate the surrounding flour bit by bit. Continue this process until a dough forms. Once the dough comes together, knead it with your hands for about 10 – 15 minutes until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  4. After resting, cut the dough into 4 portions. Take one portion and roll it out with a rolling pin or pasta machine to your desired thickness. Be sure to dust with semolina in between each roll.
  5. Once rolled out, you can cut the pasta into your desired shape—such as fettuccine, tagliatelle, or pappardelle.
  6. Cook the fresh pasta in a large pot of salted boiling water for 2-4 minutes, depending on thickness. Fresh pasta cooks much quicker than dried pasta, so keep an eye on it.
  7. Serve and enjoy!
