If you have ever wondered how to make a basic pasta right at home, then we’re going to lay it all out for you. We’re showing you how to make a simple tagliatelle pasta, but the base recipe works for all kinds of pasta shapes.
Serves: 4
Ingredients
- 300g “00” flour
- 3 whole eggs
- 1 egg yolk
- Pinch of salt
Method
- In a bowl, combine the flour and salt.
- Transfer the combined flour and salt onto your work surface. Using your hands, create a well in the centre, then add the eggs and egg yolk directly in the middle of the well.
- Using a fork, whisk the eggs and slowly incorporate the surrounding flour bit by bit. Continue this process until a dough forms. Once the dough comes together, knead it with your hands for about 10 – 15 minutes until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
- After resting, cut the dough into 4 portions. Take one portion and roll it out with a rolling pin or pasta machine to your desired thickness. Be sure to dust with semolina in between each roll.
- Once rolled out, you can cut the pasta into your desired shape—such as fettuccine, tagliatelle, or pappardelle.
- Cook the fresh pasta in a large pot of salted boiling water for 2-4 minutes, depending on thickness. Fresh pasta cooks much quicker than dried pasta, so keep an eye on it.
- Serve and enjoy!
