Are you a sweet and salty person? Then these rolls are perfect. Filled with sweet fig spread and salty cheese, as well as spinach, they make for a great appetizer or lunch!

Ingredients

  • 1 sheet of puff pastry, thawed
  • 1 bag of spinach
  • 115g goat cheese
  • 115g feta
  • 150g fig spread/jam
  • small handful of parsley, chopped
  • pinch of salt and pepper
  • 2 tablespoons of cream
  • poppy seed and sesame seed mixture, for the top (optional)

Method

  1. In a large saucepan, cook the spinach until it’s wilted down. Once done, roughly chop it before pressing it down into a sieve to remove the excess water.
  2. In a bowl, combine the feta and goat cheese with the chopped parsley. Season with a pinch of salt and pepper. Use a fork to combine into a spreadable mixture.
  3. Transfer the puff pastry onto a lightly floured countertop. Spread the fig jam evenly across, then top with the cheese mixture. Finish off by evenly placing the spinach on top. Once done. roll the pastry into a long log, then cut into individual rolls.
  4. Place the rolls into a baking tray lined with parchment paper and gently brush each one with cream and the seed mixture.
  5. Bake in the oven at 350°F for 1 hour.
  6. Once done, leave to cool before digging in!
