Looking for a quick and easy dinner? This creamy zucchini pasta is perfect. Finish off with a good amount of grated cheese for a fresh and creamy pasta.
Ingredients
- 3 zucchini’s, cut into quarters
- 1/2 red onion, medium and finely sliced
- 1 clove of garlic
- 2 tbsp olive oil
- 1/2 cup of water
- bucatini pasta
- handful of fresh mint
- salt and pepper, to taste
- pecorino or Parmesan cheese, grated
Method
- Heat up the olive oil in a large saucepan. Add the onions, then use the back of a large knife to crush down the clove of garlic and add that to the onions as well. Mix and leave to sauté until softened.
- Stir in the chopped zucchini along with a splash of the water. Reduce the heat, and leave for about 30 minutes, making sure to add a few splashes of the water until you use the entire half a cup. Once the mixture has softened, remove from the heat.
- Cook the pasta as per the package instructions, then add to the saucepan with the zucchini mixture. Add a splash of the pasta water and stir until incorporated. Season with salt and pepper.
- Top off with a generous amount of grated cheese and fresh mint.
