Being able to make a roast chicken is something everyone should know how to do when they’re first starting to cook. It’s super simple to make and will become a staple!
Ingredients
FOR THE CHICKEN
- 1 whole chicken, organic (2kg)
- 2 tablespoons olive oil (you may need a bit more)
- salt and pepper
- 1 head of garlic, cut in half
- 2 sprigs of rosemary
- 2 sprigs of thyme
- 1/2 lemon
FOR THE GLAZE
- 1 heaping tablespoon of mustard
- 1 heaping tablespoon of honey
- 1 running tablespoon of olive oil
- 1 clove of garlic, crushed
- juice of 1 lemon
Method
- Preheat the oven to 400°F.
- Pat the chicken dry with paper towels. Place the chicken flat-side down into an oven-proof dish. In the cavity of the chicken, pour in about 1 tablespoon of olive oil along with the sprigs of rosemary, thyme, and garlic. Generously sprinkle the cavity with salt, pepper, and the juice of half a lemon. Put the squeezed lemon inside the cavity as well.
- Pour the rest of the olive oil on the outside of the chicken, along with more salt and pepper.
- Roast the chicken for 45 minutes. Brush the honey mustard glaze on the outside of the chicken. Reduce the oven temperature to 350°F and roast for another 20 minutes. During the 20 minutes, brush with the honey mustard glaze once again.
- The internal temperature of the chicken should be 180°F. Once it has come to temperature, remove the chicken from the oven and let it rest covered for 15 minutes before slicing and serving.
MAKE THE GLAZE
- In a small saucepan, mix together all the ingredients. Let simmer on medium heat until the sauce has thickened. This should take about 10 minutes.
