If you’re looking to up your home cooking, then you need to know how to make a classic caesar salad with homemade dressing. Crisp romaine lettuce, sourdough croutons, chunks of shaved parmesan, and a garlicky homemade dressing.

Serves: 4

Ingredients

  • 2 large garlic cloves, chopped
  • 2 oil-packed anchovy fillets, chopped
  • 3/4 teaspoon sea salt
  • 2 egg yolks
  • Juice of 2 medium lemons
  • 1 tablespoon Dijon mustard
  • 300mls olive oil
  • 100g grated parmesan (plus extra parmesan for serving)
  • 1/2 loaf of day-old bread (either sourdough or ciabatta )
  • 1-2 heads of romaine lettuce, chopped

Method

  1. Start by making the croutons. Cut the bread into irregular pieces and place them on a baking tray. Season with salt, pepper, and a good drizzle of olive oil. Bake at 400°F for about 10 – 15 minutes until lightly brown.
  2. To make the caesar dressing, mince the garlic, anchovies and salt together on a cutting board. To do this, use the back of a chef’s knife to mince and chop until well-combined and finely diced. Once everything is very well-combined, add it to a medium-sized mixing bowl along with the egg yolks, Dijon mustard, and lemon juice. Mix until combined. Then slowly drizzle in the olive oil, whisking constantly as you do this. Continue to drizzle in the olive oil as you whisk until the mixture thickens. Add the grated parmesan and whisk. Season with salt and pepper.
  3. Add a few tablespoons of the dressing at the bottom of your serving bowl followed by the chopped romaine lettuce. Add the croutons and shaved (or grated) parmesan. Season with salt and pepper if needed and toss together. Top off with more dressing if you like.
