A crunchy and super healthy chopped salad. Made with chicken, roasted veggies, and a flavourful chili and ginger dressing. This salad is perfect for batch cooking.

Ingredients

FOR THE SALAD

  • handful of parsley
  • handful of spring mix
  • handful of coriander
  • 3 spring onions
  • 2 chicken breasts, roasted
  • 1/2 acorn squash, roasted
  • 1/4 red cabbage, roasted
  • 1 avocado
  • 1 tomato
  • 1/2 cucumber

FOR THE DRESSING

  • juice of half a lime
  • juice of one lemon
  • 1 tablespoon balsamic glaze
  • 1 tablespoon balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 chili, finely chopped
  • 1 teaspoon ginger, finely chopped
  • pinch of salt

Method

  1. Simply finely chop all the ingredients for the salad together.
  2. In a small bowl, combine all the ingredients for the dressing.
  3. Toss the dressing with the salad. Serve and enjoy!
