Serves: 2 – 3

Ingredients

FOR THE FRENCH TOAST

  • 3 slices of Brioche bread (or more depending on how many slices you need) *cut into thick slices
  • 3 eggs
  • 250ml milk
  • 100ml cream
  • 1 teaspoon cinnamon
  • Zest of half a large orange
  • 1 teaspoon vanilla extract
  • 1 teaspoon cognac
  • Nutella (to serve)
  • Maple syrup (to serve)

FOR THE BLUEBERRY COMPOTE

  • 200g blueberries
  • 80g granulated sugar
  • Squeeze of lemon

Method

  1. In a shallow bowl or baking pan, whisk together the eggs, milk, cream, cinnamon, orange zest, cognac, and vanilla extract.
  2. For the blueberry compote, mix together the blueberries, sugar, and squeeze of lemon into a medium saucepan. Let cook on medium heat, stirring frequently until the blueberries have softened and a syrup forms. This will take about 10 -15 minutes.
  3. Soak one side of the bread for about 2 minutes into the mixture, then flip it to the other side and let soak for another 2 minutes. The key is to let the bread really soak up the mixture.
  4. Melt a large knob of butter to a pan and place over medium heat. Once the butter has melted, add the coated brioche to the pan and cook for a few minutes until golden brown. Flip the bread and cook for another few minutes until golden brown. Transfer to a plate.
  5. Top the french toast with the blueberry compote, maple syrup and Nutella. Enjoy!
