Trust us when we say this is the best French Toast recipe you’ll ever have. It’s soaked in a mixture of cream and milk, with a splash of brandy and orange zest for extra flavour. Topped with an easy blueberry compote and Nutella – this French Toast will melt in your mouth. Perfect for a weekend brunch!

Ingredients
FOR THE FRENCH TOAST
- 3 slices of Brioche bread (or more depending on how many slices you need) *cut into thick slices
- 3 eggs
- 250ml milk
- 100ml cream
- 1 teaspoon cinnamon
- Zest of half a large orange
- 1 teaspoon vanilla extract
- 1 teaspoon cognac
- Nutella (to serve)
- Maple syrup (to serve)
FOR THE BLUEBERRY COMPOTE
- 200g blueberries
- 80g granulated sugar
- Squeeze of lemon
Method
- In a shallow bowl or baking pan, whisk together the eggs, milk, cream, cinnamon, orange zest, cognac, and vanilla extract.
- For the blueberry compote, mix together the blueberries, sugar, and squeeze of lemon into a medium saucepan. Let cook on medium heat, stirring frequently until the blueberries have softened and a syrup forms. This will take about 10 -15 minutes.
- Soak one side of the bread for about 2 minutes into the mixture, then flip it to the other side and let soak for another 2 minutes. The key is to let the bread really soak up the mixture.
- Melt a large knob of butter to a pan and place over medium heat. Once the butter has melted, add the coated brioche to the pan and cook for a few minutes until golden brown. Flip the bread and cook for another few minutes until golden brown. Transfer to a plate.
- Top the french toast with the blueberry compote, maple syrup and Nutella. Enjoy!
