Looking for a quick and easy dinner? This creamy zucchini pasta is perfect. Finish off with a good amount of grated cheese for a fresh and creamy pasta.

Ingredients

  • 3 zucchini’s, cut into quarters
  • 1/2 red onion, medium and finely sliced
  • 1 clove of garlic
  • 2 tbsp olive oil
  • 1/2 cup of water
  • bucatini pasta
  • handful of fresh mint
  • salt and pepper, to taste
  • pecorino or Parmesan cheese, grated

Method

  1. Heat up the olive oil in a large saucepan. Add the onions, then use the back of a large knife to crush down the clove of garlic and add that to the onions as well. Mix and leave to sauté until softened.
  2. Stir in the chopped zucchini along with a splash of the water. Reduce the heat, and leave for about 30 minutes, making sure to add a few splashes of the water until you use the entire half a cup. Once the mixture has softened, remove from the heat.
  3. Cook the pasta as per the package instructions, then add to the saucepan with the zucchini mixture. Add a splash of the pasta water and stir until incorporated. Season with salt and pepper.
  4. Top off with a generous amount of grated cheese and fresh mint.
