A delicious take on the traditional Spanish dish ‘Pan Con Tomate’ – grated tomato, garlic and parsley are spooned over grilled sourdough. Then topped with sardines and olive oil for an easy and fresh meal.
Ingredients
- 1 slice of sourdough bread
- 1 tomato
- pinch of salt and pepper
- 1 clove of garlic, finely diced
- olive oil
- handful of parsley, finely chopped
- 1/2 chili pepper, finely diced
- 1 – 2 sardines
Method
- Start by grating the tomatoes with the skin on over a large or shallow dish. Once done, run through a sieve to drain the excess juice.
- In a small bowl, combine the grated tomatoes, diced garlic and chopped parsley. Season with salt and pepper.
- Grill or toast the bread, then spoon the tomato mixture on top. Add the sardines, then sprinkle with the chilli peppers. Finish off with a drizzle of olive oil.
