A crunchy and super healthy chopped salad. Made with chicken, roasted veggies, and a flavourful chili and ginger dressing. This salad is perfect for batch cooking.
Ingredients
FOR THE SALAD
- handful of parsley
- handful of spring mix
- handful of coriander
- 3 spring onions
- 2 chicken breasts, roasted
- 1/2 acorn squash, roasted
- 1/4 red cabbage, roasted
- 1 avocado
- 1 tomato
- 1/2 cucumber
FOR THE DRESSING
- juice of half a lime
- juice of one lemon
- 1 tablespoon balsamic glaze
- 1 tablespoon balsamic vinegar
- 1/4 cup olive oil
- 1/2 chili, finely chopped
- 1 teaspoon ginger, finely chopped
- pinch of salt
Method
- Simply finely chop all the ingredients for the salad together.
- In a small bowl, combine all the ingredients for the dressing.
- Toss the dressing with the salad. Serve and enjoy!
