Being able to make a roast chicken is something everyone should know how to do when they’re first starting to cook. It’s super simple to make and will become a staple!

Ingredients

FOR THE CHICKEN

  • 1 whole chicken, organic (2kg)
  • 2 tablespoons olive oil (you may need a bit more)
  • salt and pepper
  • 1 head of garlic, cut in half
  • 2 sprigs of rosemary
  • 2 sprigs of thyme
  • 1/2 lemon

FOR THE GLAZE

  • 1 heaping tablespoon of mustard
  • 1 heaping tablespoon of honey
  • 1 running tablespoon of olive oil
  • 1 clove of garlic, crushed
  • juice of 1 lemon

Method

  1. Preheat the oven to 400°F.
  2. Pat the chicken dry with paper towels. Place the chicken flat-side down into an oven-proof dish. In the cavity of the chicken, pour in about 1 tablespoon of olive oil along with the sprigs of rosemary, thyme, and garlic. Generously sprinkle the cavity with salt, pepper, and the juice of half a lemon. Put the squeezed lemon inside the cavity as well.
  3. Pour the rest of the olive oil on the outside of the chicken, along with more salt and pepper.
  4. Roast the chicken for 45 minutes. Brush the honey mustard glaze on the outside of the chicken. Reduce the oven temperature to 350°F and roast for another 20 minutes. During the 20 minutes, brush with the honey mustard glaze once again.
  5. The internal temperature of the chicken should be 180°F. Once it has come to temperature, remove the chicken from the oven and let it rest covered for 15 minutes before slicing and serving.

MAKE THE GLAZE

  1. In a small saucepan, mix together all the ingredients. Let simmer on medium heat until the sauce has thickened. This should take about 10 minutes.
