If you’re looking for the perfect vegetable-based side, then look no further than these orange glazed roasted carrots. With a hint of maple syrup and rosemary, these are the carrots everyone will be talking about.

Ingredients

  • 5 large carrots
  • Olive oil
  • Pinch of salt and pepper
  • Juice of 3 large oranges
  • 1 sprig of rosemary
  • 1/3 cup maple syrup
  • handful of slivered almonds
  • handful of chopped parsley

Method

  1. Preheat the oven to 350°F.
  2. Peel and slice the carrots in half lengthwise. Place on a baking tray lined with parchment paper and coat with olive oil, then season with salt and pepper. Roast in the oven for 20 minutes.
  3. In the meantime, make the glaze. In a saucepan over medium-high heat, add the orange juice and stick of rosemary. Let it come to a simmer before stirring in the maple syrup. Reduce the heat slightly and let simmer until the mixture thickens. Remove the stick of rosemary.
  4. Transfer the carrots to a serving platter, then pour over the orange maple glaze. Top off with the slivered almonds and chopped parsley.
