If you’re looking for the perfect vegetable-based side, then look no further than these orange glazed roasted carrots. With a hint of maple syrup and rosemary, these are the carrots everyone will be talking about.
Ingredients
- 5 large carrots
- Olive oil
- Pinch of salt and pepper
- Juice of 3 large oranges
- 1 sprig of rosemary
- 1/3 cup maple syrup
- handful of slivered almonds
- handful of chopped parsley
Method
- Preheat the oven to 350°F.
- Peel and slice the carrots in half lengthwise. Place on a baking tray lined with parchment paper and coat with olive oil, then season with salt and pepper. Roast in the oven for 20 minutes.
- In the meantime, make the glaze. In a saucepan over medium-high heat, add the orange juice and stick of rosemary. Let it come to a simmer before stirring in the maple syrup. Reduce the heat slightly and let simmer until the mixture thickens. Remove the stick of rosemary.
- Transfer the carrots to a serving platter, then pour over the orange maple glaze. Top off with the slivered almonds and chopped parsley.
