This mango beef salad is packed full of flavour and colour. Made with lots of herbs, vermicelli noodles, tender beef, and a zesty dressing, this is the perfect lunch or dinner.

Ingredients

FOR THE BEEF

  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 300g beef

FOR THE DRESSING

  • 1 clove of garlic, finely chopped
  • 3 tbsp fish sauce
  • juice of 3 limes
  • 1 tsp brown sugar

FOR THE SALAD

  • 1/4 small red onion, thinly sliced
  • 1/2 cucumber, seeds removed and sliced
  • 1/2 cup fresh coriander, finely chopped
  • 1/4 cup fresh mint, finely chopped
  • small handful of basil, finely chopped
  • 1/2 chili, chopped
  • 1 mango, peeled and thinly sliced
  • 80g vermicelli rice noodles

Method

  1. Prepare the beef: In a small bowl, mix together the fish sauce and brown sugar. Place the beef in a large mixing bowl and pour the marinade all over. Set aside while you make the rest.
  2. Prepare the dressing: In a small bowl, mix together the fish sauce, chopped garlic, brown sugar, and juice of 3 limes. Set aside until ready to use.
  3. In a large bowl, add the vermicelli noodles and pour over with hot water until fully covered. Leave for 10 minutes to soften.
  4. In the meantime, heat a little bit of olive oil in a saucepan. Place the beef in the pan over medium-high heat and cook for 3 minutes on each side. Remove from the pan and let rest for about 10 minutes. Once done, thinly slice the beef. Drain the noodles from the water.
  5. Assemble: In a large serving dish, start by layering the vermicelli noodles, sliced onion, cucumber, then beef. Add the sliced mango on top, then the coriander, basil, mint, and chilli. Pour the dressing all over and gently toss.
