A kitchen cupboard staple; this homemade granola is filled with all the good stuff, without compromising on the flavour. Made with a variety of crushed nuts, medjool dates, dried cranberries, and a pinch of cinnamon. Enjoy as a snack or topped over yogurt.

Ingredients

  • 3 cups oats
  • 1/2 cup coconut flakes
  • 1/4 cup almonds, roughly chopped
  • 1/4 cup walnuts
  • 1/4 cup olive oil (or a neutral oil)
  • 1/4 cup maple syrup
  • 3 medjool dates, roughly chopped
  • handful of dried cranberries
  • 1/4 tsp cinnamon
  • handful of slivered almonds

Method

  1. Preheat the oven to 350°F.
  2. On a lined baking tray, mix together the oats, coconut flakes, almonds, walnuts, olive oil and maple syrup. Bake in the oven for 15 minutes, then give the mixture a stir and continue baking for another 15 minutes.
  3. Remove from the oven, then add in the medjool dates, cranberries, cinnamon, and slivered almonds. Mix until combined.
  4. Store in an airtight container.
