A nod to traditional Irish comfort food with a twist. Creamy mashed potato with savoy cabbage and a layer of crispy cheddar cheese.
Ingredients
- 1 kilo yellow potatoes, peeled and cut into chunks
- 300g savoy cabbage, roughly sliced
- 5 spring onions, finely sliced
- 85g butter
- 50ml milk
- 50ml cream
- 1/4 tsp nutmeg
- 1 tso thyme, chopped
- pinch of salt and pepper
- 100g cheddar cheese, grated
Method
- Add the potatoes to a pot of cold water, then place on high heat and bring to a boil. Leave on the heat until the potatoes are fork-tender.
- While the potatoes are boiling, prepare the cabbage. In a pan, add roughly 1/4 cup of water before placing the sliced cabbage. Cover and let cook on a medium heat until soft. Once done, remove from the heat. Drain the excess water, if any.
- When the potatoes are cooked, drain the water, then transfer them to a large oven-safe bowl. Add the butter, then use a potato masher to mash the potatoes. Once roughly mashed, add in the milk and cream – mash until creamy and smooth.
- Add the spring onion, nutmeg, thyme, and cabbage. Season with salt and pepper. Stir to combine.
- Sprinkle the top with grated cheddar cheese. Broil in the oven for about 5 minutes until the top is melted and golden brown. Serve alongside the rest of your dinner or eat them on their own!
