A nod to traditional Irish comfort food with a twist. Creamy mashed potato with savoy cabbage and a layer of crispy cheddar cheese.

Ingredients

  • 1 kilo yellow potatoes, peeled and cut into chunks
  • 300g savoy cabbage, roughly sliced
  • 5 spring onions, finely sliced
  • 85g butter
  • 50ml milk
  • 50ml cream
  • 1/4 tsp nutmeg
  • 1 tso thyme, chopped
  • pinch of salt and pepper
  • 100g cheddar cheese, grated

Method

  1. Add the potatoes to a pot of cold water, then place on high heat and bring to a boil. Leave on the heat until the potatoes are fork-tender.
  2. While the potatoes are boiling, prepare the cabbage. In a pan, add roughly 1/4 cup of water before placing the sliced cabbage. Cover and let cook on a medium heat until soft. Once done, remove from the heat. Drain the excess water, if any.
  3. When the potatoes are cooked, drain the water, then transfer them to a large oven-safe bowl. Add the butter, then use a potato masher to mash the potatoes. Once roughly mashed, add in the milk and cream – mash until creamy and smooth.
  4. Add the spring onion, nutmeg, thyme, and cabbage. Season with salt and pepper. Stir to combine.
  5. Sprinkle the top with grated cheddar cheese. Broil in the oven for about 5 minutes until the top is melted and golden brown. Serve alongside the rest of your dinner or eat them on their own!
