One of those sandwiches you’ll make on repeat. With a cream cheese spread, chopped artichokes and roasted peppers, as well as mortadella, this is a sandwich you’ll keep coming back to because it’s just that good.
Ingredients
- 170ml artichokes, finely chopped
- 45g sliced roasted red peppers, finely chopped
- 64g whipped cream cheese
- 25g plain yogurt
- 4 slices of mortadella
- 1 ciabatta bun
- handful of green sprouts
Method
- Start by making the spread: In a small bowl mix together the yogurt and cream cheese until well combined.
- Scoop out part of the bread filling on the bun – this is optional – but it just makes it easier to add more filling.
- Spread both sides of the bun with butter and then most of the cream cheese spread, but save some for later. Layer the mortadella slices on top, along with the chopped artichokes and peppers. Drizzle more of the cream cheese spread. Top with the green sprouts.
