Everything you love about bread pudding, but made even better thanks to the croissants. Made with blueberries and a drizzle of dark chocolate, this would be perfect either on its own or served with warm custard.

Ingredients

  • 5 day old/ stale croissants
  • 1/4 cup frozen/fresh blueberries
  • handful of sliced almonds
  • 300g milk OR combination of milk and cream
  • 2 large eggs, just the yolks
  • 1 1/2 tbsp granulated sugar
  • 25ml cognac or whiskey
  • drizzle of dark chocolate

Method

  1. Preheat the oven to 350°F.
  2. In a medium saucepan, heat the milk until just boiled. In a separate bowl, whisk the egg yolks with the sugar. Add a small amount of the milk into the eggs and sugar to temper it, all while whisking. Add that mixture into the large pot of milk while continuously whisking. Stir in the cognac or whiskey.
  3. Cut the tips of the croissants and save them. Slice the croissants lengthwise. Butter an oven-safe dish and arrange the croissants. Place the tips on top. Add the blueberries.
  4. Pour the custard mixture into the bowl of croissants. Sprinkle with the sliced almonds.
  5. Bake for 25 – 30 minutes, until golden brown.
  6. Once out of the oven, drizzle with melted chocolate.
