Cozy up with this delicious steak and Guinness pie. Tender stewing beef is covered in flaky puff pastry for the ultimate comfort meal!

Serves: 4 – 6

Ingredients

  • 1 1/2lbs stewing beef
  • 2 tablespoons olive oil
  • Pinch of flour
  • 1 medium onion, thinly sliced
  • 1 garlic clove, finely diced
  • 1 small carrot, peeled and sliced
  • 250ml Guinness
  • 1 sprig of rosemary
  • 2 sprigs of thyme
  • 150ml beef stock
  • 2 tablespoons tomato purée
  • Pinch of salt and pepper
  • 1 sheet of puff pastry

Method

  1. Preheat the oven to 325°.
  2. In a large oven-proof pan over medium-high heat, add the olive oil. While the oil is heating up, pat the beef dry with a paper towel and season with salt and pepper. Brown the beef and transfer to a plate.
  3. Add the onions and garlic to the pan, along with the carrots. Sauté until soft but not browned, then stir in the seared beef. Add the sprigs of rosemary and thyme, along with the Guinness, beef stock, and tomato purée.
  4. Cover the pan and cook in the oven for approximately 2 hours until the meat is fork-tender and pulls apart.
  5. Once done, remove from the oven and transfer the filling to a serving dish. Roll out 1 sheet of puff pastry, making sure it covers the filling. Egg wash the sides and top of the pastry. Score the top with two marks before placing it back in the oven at 360°F. Cook for another 30 – 40 minutes until golden brown.
  6. Serve and enjoy!
