You’ve probably seen this viral pasta all over social media, and for good reason. This spicy vodka rigatoni is ultra creamy and delicious, plus it has a nice kick to it thanks to the chilli. It comes together in less than 30 minutes for a quick dinner!
Serves: 4
Ingredients
- 2 tablespoons olive oil
- 1/2 large onion, finely chopped
- 1 red chilli, finely chopped (or less depending on spice preference)
- 1/3 cup Vodka
- 1 cup cream
- 1/4 cup tomato paste
- 1/4 cup grated parmesan, plus more to serve
- 170g rigatoni
- salt and pepper
Method
- In a large saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent.
- Add the chilli and tomato paste. Sauté for another minute. Pour in the vodka and let it simmer for 2-3 minutes, allowing the alcohol to cook off and the flavours to meld.
- Pour in the cream while stirring continuously. Simmer until the sauce thickens slightly. Stir in the grated parmesan and season with salt and pepper. Reduce the heat to low and let simmer while you make the pasta.
- In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Once cooked, drain the pasta and stir into the sauce. If the sauce is too thick, add some of the pasta water to reach your desired consistency.
- Transfer onto plates and finish off with more grated parmesan. Enjoy!
