A flaky goat cheese tart with jammy caramelized onions and olives. Perfect as an appetizer for a dinner party or as a quick dinner at home. Incredibly easy to make and something everyone will love!

Serves: 6

Ingredients

  • 100g pureed tomatoes
  • 35g butter
  • 1 teaspoon olive oil
  • 1/2 large onion, sliced
  • goat cheese
  • 2 sprigs of thyme, leaves removed from stem
  • salt and pepper, to taste
  • 1 box of puff pastry

Method

  1. Pre-heat the oven to 425°F.
  2. In a saucepan, heat the olive oil and butter. Caramelize the onions on medium heat until softened. This will take about 20 minutes. Stir in the pureed tomatoes and leave on the heat for another 20-25 minutes until you have a jammy consistency. Season with salt and butter.
  3. Roll out the puff pastry and use a medium round object, such as a small bowl, to cut out 6 individual rounds. Then cut out 6 more rounds, and use a smaller object, such as a mug, to cut out the outer layer. Place the bottom rounds onto a baking tray lined with parchment paper.
  4. Egg wash the bottom of the rounds then place the outer layer on top. Spread some of the onion mixture in the middle, and top with goat cheese and pitted olives. Sprinkle with thyme.
  5. Bake in the oven for 20 minutes until the pastry is golden brown.
