This hearty vegetable soup is perfect for cold winter days. It’s filled with healthy and good for you ingredients that will keep you full and warm. It’s also super simple to make. Tip: if you don’t have some of the ingredients listed, use whatever vegetables you do have!

Serves: 4

Ingredients

  • 1/2 small onion, chopped
  • 1 leek, chopped
  • 2 small turnips, diced into cubes
  • 2 carrots, roughly chopped
  • 1 handful of brussel sprouts, halved
  • 1/4 cauliflower, roughly chopped with the leaves
  • 1/4 butternut squash, cubed
  • 10 small potatoes, halved
  • Salt and pepper, to taste
  • 2 sprigs of sage
  • 2 sprigs of thyme

Method

  1. In a large pot over medium-high heat, melt a generous knob of butter before adding the leeks and onion. Let soften and season with salt and pepper. Mix in the rest of the ingredients, adding the sage and thyme last (no need to remove from the stem).
  2. Once all the ingredients are mixed in, pour boiling water so that it just covers all the vegetables. Let simmer on low heat until the vegetables are fully cooked – this can take about 40 minutes.
  3. Remove from heat and partially purée but make sure to leave the majority of the vegetables chunky.
  4. Serve with croutons or sliced bread on the side!
