If you’ve been looking for an easy focaccia recipe then this is perfect. Topped with sage, thyme, and sea salt, our focaccia is light, fluffy and delicious. Eat it alone or use as the bread for a sandwich.

Ingredients

  • 500g all-purpose flour
  • 7g dry-active yeast
  • 1 teaspoon honey
  • 325ml tepid water
  • Pinch of salt
  • Olive oil
  • sprinkle of Semolina

FOR THE TOPPING

  • 25ml water
  • 25ml olive oil
  • Handful of sage leaves, chopped
  • Handful of thyme, chopped and removed from stem
  • Pinch of sea salt

Method

  1. Start by combining the water and yeast in a bowl, along with a teaspoon of honey. Mix it, cover it, and set aside until it begins to slightly bubble.
  2. In the meantime, add the flour and a pinch salt to a mixing bowl. Then mix in the water and yeast. Continue to stir until it forms a dough. Transfer to a lightly floured countertop and knead for 10 minutes until the dough is smooth and elastic-like. Form it into a round shape, then put the dough back in the bowl. Cover it and let proof for 45 minutes.
  3. To prepare your baking dish, add a sprinkle of semolina and some olive oil. Ensure the entire base of the dish is covered so that the focaccia does not stick. Stretch the dough to fit the size of your baking dish. use your fingers to gently poke a few holes along the top. Combine the water and olive oil together and pour over the dough, along with the thyme, sea salt, and sage. Cover and let proof a final time for 1 hour.
  4. Once done proofing, bake the focaccia in the oven at 400°F for 30 minutes.
  5. Remove from the oven and top off with a drizzle of olive oil and sea salt. Let cool slightly before removing from the pan and serving.
